License to blog..

Its official my bloggers license has been revoked, I suck at this now. I think I have done more in my first three months of blogging almost two years ago (which got wiped out) than I have in the last year. So much going on around here...

Fall arts and crafts, temper tantrums, lots of seasonal baking, melt downs, trips outdoors to enjoy the crisp air, oh did I forget to mention the attitude around here? Yea its been FUN and exhausting all at the same time. But to wrap up the day when you hear I Love you mommy, it almost makes it all better..yea, Im a sucker.

So with all that attitude we decided to have a change of pace and just go to the mall...to people watch...or be watched, whatever. To go walk and window shop. So we went to an indoor play area at the mall, I walked up the ramp and it was like walking on a pillow, soft, fluffy, bouncy. I havent felt that light since gradeschool, lol. My little tot climbed up and fell off everything but got back up and kept playing like nothing happened, sure hes tough but when I was growing up if you fell off something that high up you laid there till you got your wind back and hobbled off, they didnt have soft fluffy play areas then. I had wood splintered jungle gyms and scalding hot metal slides built on concrete, lol. Glad my kids dont have to experience the joys of burning their buns or falling hard.

The kids had their first mechanical ride at the mall. I remember the donald duck or the choochoo outside the grocery store growing up. Sit down, pop in a quarter and it would play circus music and sway left to right or move up and down, front to back. Not so thrilling. But these were cool, I wanted to get on one and would have if it hadn't been a food court full of people watching. My big boy loved it, he got in a race car with a real live racing game inside. Put in a dollar-talk about inflation- and it started up, before I knew it he was tilting in every direction, vibrating and going vroom vroom speeding along with a bunch of virtual race cars. We put lil tot on and he did not like it one bit, he cried and clung to us, poor thing. All well, try again next time.

Monday, Monday...

This morning I put my box of tea bags in the freezer and my milk in the pantry...???? Ever have one of those mornings?...I actually slept well last night too, maybe too well. I feel hungover, perhaps too much chocolate cake at my sons birthday party. I finally "woke up" when I had the "priviledge" of running outside..through the sprinklers to turn them off and theres my shower... two birds one stone. This past week, we battled a lovely cold bug too to kick off the start of fall weather so its time to stock up on tissues. And speaking of fall, this is the first September in three years that I have not been pregnant (that I know of, but the months not over....yet, lol)...with all those lovely baked fall and winter goods on the way there is no excuse to eat without reckless abandon, no one thinks its cute when you bump of chub sticks out from under your shirt if theres not a baby in there, lol. Guess I will need some lower fat recipes...or just an extra walk a day ;) With that, I must go now...a hot cup of chai and another slice of cake are calling....*sniff, sniff*...lovely...the scent of a poopy diaper too, lol. Cough, cough

...I'm a slacker, I barely have had enough to time to clean my floor lately, let alone blog...I only thought of blog today because someone I know mentioned blogging, lol. So what have I been up to beside refereeing toddler fights and cleaning up baby dribble :) Not much, I have been experiementing with different recipes, planning my big boys birthday party, starting solids with my little one and keeping after my middle one who totally fits the definition of a second child, they will be faster, fall harder, spring up quicker, cuddle more yet be easier, how is that, lol hes keeping me on my toes thats for sure, lol, God I love him. And we have been getting out alot trying to enjoy the last of the summer weather with picnics, and zoo trips, all three of my loves and I basking in the sun, its been fun...but I think fall is now upon us.

I went to bed last night to the sound of rain dribbling on my window, rustling the bushes out side, so melodic...those night we all sleep very well. I awoke to a dark, cloudy, cold, wet day and its awesome. Sure I am more of a springy person but I am soo ready for the leaves to change and fall. Ready to whip up stuff that makes my home smell of pumpkin, cinnimon, apple, and spices. I swear I should of known the weather was changing, just as animals spaz out with climate change so do children. Boy my kids put us through our paces this last weekend, I thought I must be loosing my mind, how many tantrums can one have in a day...not just the adults the kids to ;) We talked to family and friends and their kids were just as "fun" over the weekend, lol, so it is the weather.

So now leaves are turning and falling, I dont mind having to sweep them up, it means good things, a new season to love, it means playing with pumpkin mush, toasting seeds, making wax leaves with the kids to hang infront of the window as stained glass. It means my oven will get used ALOT popping out yummy creations. It means trips to the pumpkin patch, apple orchards, and fair, the balloon fiesta glows and cuddling under blankets with a big mug of Chai tea paired with a biscotti. I'm geeked! (just dont make me wear a turtle neck)

Tortillas, sopas, y mas...

Oops, haven blogged for over a week, been taking pictures of the kiddos, been outdoors, experimenting with some new recipes and I got to visit my grandmother, so I'm just keeping busy.

One thing my grandmother can make like no one else is tortillas, I LOVE tortillas, homemade is best. Growing up it was nothing to have tortillas and sopapillas with our meals the way many people have biscuits or rolls. Homemade tortillas are sooo easy to make and take hardly any time or effort, you can find a bazillion recipes online but the basics are the same...flour, salt, water, oil, and baking powder. Its also fun for the kids to help make too, many a vcr has been stuffed with tortilla dough in our family over the years so watch them close ;)
  • 4 cups flour
  • 2 tspn baking powder
  • tsp salt
  • 4 tsp+ oil
  • 1.5 +/- cups warm water
Put dry ingredients into a bowl and mix, add in water very slowly while mixing again, drizzle in oil and slightly knead till you have a nice big ball. Lay a slightly damp cloth over the top and let sit for 30 minutes to an hour.

*you can section your big dough ball into golf ball size balls (@ 12 or so of them and lay them together back in the bowl to sit or just section them off after they sit...whatever you prefer)

Take a golf ball sized ball and roll it out, make a square, make a circle, whatever...I do both, partially because I suck at rolling and partially it keeps things interesting, lol. The thinner you roll your dough the more likely you can roll the cooked tortillas for a burrito, but we use tortillas to scoop our food and soak up bean juice so all thickness and size is good.

Peel up your rolled out dough and place in a pan on medium to medium high heat. Just like a pancake...you know its time to flip your tortilla when you see bubbles coming up. Flip it (some of those little bubbles might have turned a golden brown, thats good, let sit another minute then lay on a plate, you can do this by hand, its like playing hot potato, but you can use a large spatchula if needed too. Repeat untill all dough balls are now tortillas. Let sit a few more minutes, Enjoy! Homemade tortillas can keep a couple days, but really they dont last that long around here :)

*I have halved the recipe before to make a smaller batch and it works well, often times I use the full recipe and used half for tortillas and half for sopapillas...

Sopapillas, use the same ingredients instead of peeling up your rolled out dough and placing in a pan, cut your rolled out dough in half and half again, making 4 triangular peices. Have small pot of oil heated on med high heat, lay your triangular dough in the hot oil (careful) it will puff up immediately and be brown and gold in color, roll it over so the other side gets toasty too (I use a slotted spoon to do these). It should only take a few seconds each side. With a slotted spoon fish it out and lay it on a paper towel covered plate to drain and dry. Repeat untill you have all the sopapillas you like. Sopapillas are often times served in mexican restaurants with honey, kind of like a dessert or the cool down at the end of a meal, there are lots of ways to eat them. You can drizzle honey on top or even powdered sugar or cinnamon and sugar. Lots of times we stuff them with beans, ground or shreaded meat, cheese and salsa. The possibilities are endless, but they are so delicious~
